Which sonar do I pick to start?

For medium waters (gravel pits, small reservoirs), Horizon Spectra is plenty, with GPS and bathymetry. For big lakes with weed, Crystal gives sharper bottom rendering. Mirror is for intense sessions where you want to see left and right of the baitboat, not just below.

Does it work without a baitboat?

Yes, but you lose half the value. Horizon sonars are designed for baitboats and controlled sweeps across the lake. Kayaks work; from the bank you lose the GPS sweep that creates most of the value.
